The history of the recipe

On 12 July, the Duke of Clermont-Tonnerre, Lieutenant-General and Commander-in-Chief of the Dauphiné, offered a meal to the municipal officers of Gap who had been battered the day before by a particularly violent riot. It was on this occasion that the term gratin dauphinois was first recorded in writing.
