Creamy Chicken and Spinach Coquillage Pasta

Ingredients:

  • 250g Panzani Coquillage pasta
  • 2 chicken breasts, diced
  • 2 cups fresh spinach leaves
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add Panzani Coquillage pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Prepare the Chicken and Vegetables: In a large skillet, heat olive oil over medium-high heat. Add diced chicken and cook until browned and cooked through, about 5-6 minutes. Remove chicken from the skillet and set aside.
  3. Sauté Onion and Garlic: In the same skillet, add chopped onion and minced garlic. Sauté until onions are translucent and garlic is fragrant, about 2-3 minutes.
  4. Add Spinach and Sauce: Add fresh spinach leaves to the skillet and cook until wilted. Pour in chicken broth and heavy cream. Bring to a simmer and let it cook for 2-3 minutes to slightly thicken the sauce.
  5. Combine Pasta and Sauce: Add cooked Panzani Coquillage pasta to the skillet with the sauce. Stir well to coat the pasta evenly.
  6. Add Chicken and Cheese: Return the cooked chicken to the skillet. Stir in grated Parmesan cheese until melted and incorporated into the sauce. Season with salt and pepper to taste.
  7. Serve: Garnish with chopped fresh parsley. Serve hot and enjoy your creamy chicken and spinach coquillage pasta!
