Creamy Chicken and Spinach Coquillage Pasta
Ingredients:
- 250g Panzani Coquillage pasta
- 2 chicken breasts, diced
- 2 cups fresh spinach leaves
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook the Pasta: Bring a large pot of salted water to a boil. Add Panzani Coquillage pasta and cook according to package instructions until al dente. Drain and set aside.
- Prepare the Chicken and Vegetables: In a large skillet, heat olive oil over medium-high heat. Add diced chicken and cook until browned and cooked through, about 5-6 minutes. Remove chicken from the skillet and set aside.
- Sauté Onion and Garlic: In the same skillet, add chopped onion and minced garlic. Sauté until onions are translucent and garlic is fragrant, about 2-3 minutes.
- Add Spinach and Sauce: Add fresh spinach leaves to the skillet and cook until wilted. Pour in chicken broth and heavy cream. Bring to a simmer and let it cook for 2-3 minutes to slightly thicken the sauce.
