The history of the recipe
It is on the eve of the French Revolution, in 1788, that we find the first mention of the gratin dauphinois. On 12 July, the Duke of Clermont-Tonnerre, Lieutenant-General and Commander-in-Chief of the Dauphiné, offered a meal to the municipal officers of Gap who had been battered the day before by a particularly violent riot. It was on this occasion that the term gratin dauphinois was first recorded in writing.
Preparation
